What Isn't For Dinner!? Overcooked, but Nicely Seasoned Ribs

Dry rub on grilled ribs is great, but leaving it on the heat too long is, well, let's focus on that side dish ...

If it's true what they say, then a picture is worth a thousand words!  I don't need to write a thing.  Yes, this is what happened to my ribs. All because I walked away and got involved in doing other things. I had the grill on too high and well, the rest, as they say, is history. 

I even took and used a dry rub this time and I have to admit, it smelled wonderful.  I used plain ole' seasonall and some dry mustard I found. All day long, Picky eater No. 2 kept walking by saying it smelled so good and couldn't wait for dinner.

Funny thing was, picky eater No. 2 (whom I credit for feeling sorry for me) said, "Oh, it'll be alright mom, we'll just scrape some off."  (Love him!)  So while choking it down, he said, "it really isn't that bad. The part underneath is really good!"

So, I guess the dry rub is good and I'll try it again (later in the season ... maybe when they forget) Oh, who am I kidding, they won't forget ...

The side dish I made came out beautifully, however I will say that I have made it for years and it is a no fail. Basically I start with oil and some garlic. I let that heat up first and then put a can of sliced mushrooms in and let that heat for a while. Next I add a bag of frozen peas and carrots. When the peas and carrots have defrosted, I add a can of chicken broth.  While this is heating, I add about a third cup of onion (I use dry onions).

After the onion has heated, I add about a cup and a half of rice. Put the lid on and let the chicken broth soak into the rice. At this point I add salt and pepper to taste. The dish is then finished with parmesan cheese on top.

The reason I'm not giving exact amounts is because this dish is so easy to mix and match other ingredients with. You can use green onions if you wish.  You can even use other vegetables. Just make sure you have enough chicken stock.
