What's For Dinner?

Wings ... need I say more?

Since the weather doesn't want to seem to break so everyone can start grilling, I decided to make wings the other day.

I make them a lot during the winter and still haven't been able to find a good recipe. I have tried every which way possible to make them. Sometimes I bake them first and then throw some barbecue sauce on 'em and then bake 'em again. Then I tried marinating them with different sauces and dry rubs. I couldn't come up with the best ingredients (at least for my picky eaters).

That is until the other day when I was talking to a co-worker. He is a great cook (well, he seems to enjoy HIS cooking!)  He was asking me "what's for dinner?" (ha!) and I told him I had wings defrosting, and that well, ... you know the story.

He told me about this recipe I am going to share with you, HOWEVER, I didn't have the exact ingredients (AGAIN) and improvised. If I do say so myself ... they came out better than ever.  (Thank's Mike!) 

This time I threw them in a Ziploc bag full of flour and spices. I used seasonal and added more chili pepper  (you can use whatever spices you want); then put them in the oven to cook for a bit. When I took them out, they looked good, however since I didn't have the recipe, I started to improvise, when picky eater No. 1 (PE No.1) stopped by and started adding some sauces.  PE No.1 threw on some Frank's hot sauce, chipotle sauce and then last but not least, dijon mustard.   Hmmm ... I was impressed.

I let them cook a little longer to let all the sauces infuse and ta-da!  PE No. 1 and hubby enjoyed them ... a lot. Now if I could get PE No. 1 to eat the side salad and corn I made ...

Now remember, I didn't follow the recipe exactly and you don't have to either, however I would recommend making sure the wings are thoroughly thawed and dry to make sure the flour sticks to it. Of course, because of time constraints (what mom has enough?) my wings weren't completely thawed.

So here's the recipe:

  • 3/4 cup all-purpose flour
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 20 chicken wings
  • 1/2 cup melted butter
  • 1/2 cup hot pepper sauce (such as Frank's RedHot®)
  1. Line a baking sheet with aluminum foil, and lightly grease with cooking spray. Place the flour, cayenne pepper, garlic powder, and salt into a resealable plastic bag, and shake to mix. Add the chicken wings, seal, and toss until well coated with the flour mixture. Place the wings onto the prepared baking sheet, and place into the refrigerator. Refrigerate at least 1 hour.
  2. Preheat oven to 400 degrees F (200 degrees C).
  3. Whisk together the melted butter and hot sauce in a small bowl. Dip the wings into the butter mixture, and place back on the baking sheet. Bake in the preheated oven until the chicken is no longer pink in the center, and crispy on the outside, about 45 minutes. Turn the wings over halfway during cooking so they cook evenly.
