What's to Eat Before Dinner?

Easy summer grilling appetizer!

With summer still in full swing, I just don't have the ambition to cook a full meal in the kitchen, so I thought I would bring a wonderful appetizer I just made.  I made cajun shrimp skewers and everyone loved the flavor.  This is definitely a keeper for me.  This recipe calls for 1 pound of uncooked jumbo shrimp, peeled and deveined. 

In a large resealable plastic bag combine:

2 tbsp. oil

1 tbsp. onion powder

1 tbsp. paprika

1 tbsp lemon juice

1 garlic clove, minced (I used jar)

1/4 tsp crushed red pepper flakes

1/4 tsp. ground pepper

1/4 tsp cayenne pepper

Add the shrimp and refrigerate for at least 30 minutes.  You can skewer them and grill for 5-8 minutes until pink.  The flavor was wonderful.

I would also recommend a side appetizer of grape tomatoes, mozzarella, and basil drizzled with olive oil and a little salt. This too can be skewered, but it is just as amazing all together in a bowl so the flavors mesh together.

For desert I cut up pineapple, grilled it and poured a little honey on it.  Simple!
